If that is your biggest worry, pick a ship that you want to use to explore in. Look at its loadout. Then using tools such as INARA and others, find a station on the edge of space of where you want to go. You can also now use these tools to see what the stations sell as far as ships and modules. Take a different ship that uses the same size modules that you want to use, travel to that station. Strip your ship and buy the new one and buy back the mods you need that you previously sold. Then head out from there. You can even head in with Guns and chaff and SCB's and all that then sell them at the last station.
But from my experience, A ship with a good jump range, all the exploring components, and shields can deal with interdictions. You don't want to stop and fight as you then risk being killed, or damaged. Does not matter if you want to do it in a Sidewinder or Anaconda or anything else.
I have just done several runs from the edge of populated space in the empire back into the heart of the empire in an asp that can handle itself, and all I did was submit Boost Boost jump and NEVER incurred any damages. 3 days and over 50 million credits earned with some excitement, but no damage.
I will stand by my suggestion (if you are going to do a REAL long voyage, say 20K ly or more) that a ship that is designed to Haul long distances will suffer less wear and tear damage. Now if you are not going to scan planets and just Jump Honk Scoop, that is different.
And you have to realize, EVERY type of ship in the game has been taken to the core. Rang3r took a sidewinder to the OTHER SIDE of the Galaxy and all he brought along was whisky and a transmitter to stream it on Twitch
