Aiming for the escape velocity thingy is how you're supposed to avoid interdictions - notice that to either side of your crosshair there is a bar thingy. The one on the left is blue, the one on the right is red. While your view is centred on the escape velocity, the blue bar will count up - this is you getting closer to escaping and if the blue bar hits the top, you successfully avoid the interdiction. The red bar is how cloes your interdictor is to successfully pulling you out of supercruise, so if it reaches the top then that's what happens.
I used to try winning at the escape velocity thingy but after reading about it on the forum I found that the fastest thing to do is drop the throttle to zero so I submit to the interdiction (your FSD recovers much faster if you submit than if you get pulled out) and then just leg it. Since i maxed out my thrusters on my Cobra there's been nothing that's come close to catching me. i did once get a missile launched at me but it streaked right past me moments before I hit the Jump button so fortunately I didn't have to deal with the possibility of it turning round and coming back (if it was a homing missile, which I have no idea if it was).
