I'd say 2 Point Defence systems as you tend to pull a lot of Aggro when you start dusting defence turrets. Any and all Goliaths in firing range will go hostile and a single point defence system will not cope with the onslaught.
Dumbfires will take smaller turrets out with splash damage, and one dumbfire can drop 5-7 sentries in the splash as well. be warned 2 dumbfires will take out any and all canisters in the splash zone. 5-6 dumbfires will take out large turrets. Planetary Turrets on larger bases will take a couple more. If you are in the fire arc of turrets, they will drop your shields quickly, so take them out from a low angle as they can't aim low enough.
A couple of runs Skipp and you will soon see what you need and adjust accordinly. I have a Keelback with fixed Multis instead of beams on the medium hardpoints, and small dumbfires. With 2 point defence, I have no issues unless I get in a bad position and more than 3 large turrets open up on me at once. Even my asp with a 5A shield can be dropped quickly if I am stupid in my firing position.
Once you do a couple, you will will see how easily it can be done. The first couple, well, wear some brown pants
