I use MSI Afterburner, it's FREE and does an excellent capture.

I've tried a lot of solutions but I always come back to MSI Afterburner, it just gets better and better with each version.
Did I mention it's free, lol.
OK, It may look complicated but it's actually pretty easy.
Once you install it, go to Settings - Video Capture tab (not screen capture, that's for pictures).
Set your Capture Key; I use
F12 (as I don't have an Oculus Rift)
The default compression is very good,
MJPEG, as no third party codecs are required to play files.
I like to set the Frame Size to
16:9 1080p, but the default video setting are a good starting point.
The default quality of
85% is also good to keep file sizes relatively small, increasing quality naturally will increase file size.
Set your video folder to desired location, preferably on a separate drive from ED but not necessary.
And that's about all you'll need to do to get capturing in-game.
