Bit same for me, I prefer to keep speed up because only time I really am scooping is when I am doing long rare run. So I want to have speed to bug out of there at moment's notice to avoid potentially costly meeting.

Well, you could from system panel change the firing settings of turrets to make them stop. Not fast or convenient but beats fiery death of boiling in the cockpit.

Well, turrets appear to generate less heat, and do less damage, so I doubt it would be quite the same?

Personally I like mixing beams with kinetics to let things cool down a bit.
