Red star in the radar

When a star turns red in the radar, what does that mean exactly ? Fuel scooping begins much before that so it is not an indicator for scooping range. Something to do with heat ?

I'm only guessing but I am assuming it means you are within range of being under it's heat effect.
In short you are inside the corona or something..

Ummm corona...
I'm thirsty.

My experience, iirc, is that you really slow down if it turns red and it takes a lot longer to get away.

Can't be collision course, and not heat related either. I went on a small test drive, this time I aimed for a water world. That too changed to red when very close, so maybe it's some sort of proximity alert or the speed thing Roger mentioned. Impact alarm is in the top right corner, and when I pointed the nose away from the planet when it was red on radar, it remained red.
Next time I'll do the test with some other ship than Cutter, the brakes on that thing are not very good.
(Don't worry, no hull damage this time)
:)

I wonder if there is a complete nuts and bolts manual somewhere, the one provided by Frontier itself does not cover everything.

It's just proximity. If you watch next time you'll notice the heat reading rising faster when it's red. When it is orange you gain heat at a slower rate.

I think it indicates that you're close enough for its mass to disrupt your friendship drive, inhibiting your supercruise speed. The bigger and redder the star/planet, the greater the inhibition.
