In game pausing in real time

I've often found myself needing a pause button if I'm in action somewhere, say the phone rings, someone turns up at your house or you need a visit to the space latrine. Is there a way to do this without totally exiting the game (and if you do where does it put you back)?? Heading to the nearest station to dock isnt always practical.
Last time I tried pulling out of the RES and just floating somewhere, only to return 5 minutes later to find my hull at 22% and cockpit lit up like a Christmas tree as some bandit thought it was his lucky day encountering a sitting duck with the pilot awol!

Nope, there is no pause. The joys of a shared universe is that another player could drop in on you in Mobius/Open and in theory an NPC could do the same.
Your best bet is to exit to main menu - that restarts quicker than going back to desktop. Restarting puts you back where you were (roughly).

The closest we have is Exit to Main Menu.

If you drop from supercruise into 'normal' space you can float there safely. it's what I do when I need a loo break or the like.
In Open though, other players could see your wake and drop on it, so this is only 'safe' in solo or group.

NPC's will also drop in on your wake from time to time too. You've just been lucky

I've had NPCs drop in on me in normal space. It's fine if you're out of "the bubble" but otherwise the main menu is the safest place.
Having said that, you'd still need to have a poo in space. If you're after total immersion (in the game, not in poo) then you would get to a safe haven before leaving the cockpit. In fact, you'd go to a station, so that at least someone else gets to clean up.
