I've been in deep space for a while and come back to find that SCBs now generate a ridiculous amount of heat.

Aside from relying on heat sinks now, what other details am I missing?

Also... after going thru "Options" "Controls"... it seems that the SCB key bind is MIA. I went thru the list several times and couldn't find it. IDK.... maybe its the Space Madness but I don't see it.

I usually equip lower-classed sinks. Shields do not regenerate fully of course but you have no heat issues, only if you already built up heat through your weapons or similar. You are on the safe side for the moment you need to pop another SCB. If required.

I have it bound to a joystick button so it's no big deal but I just don't see it in the menu.

I actually don't know I can see if I can find it next time I'm on.

I have set VoiceAttach to trigger one of each at once from a button on my HOTAS. But it’s possible to get no damage from using shield cells without heat sinks if you retract your weapons, maybe disable a couple of modules, and wait until your ship’s temperature has done down to its minimum. When I do that on my Corvette I get the overheating alert but no damage.

Actually very easy. Even a distinguished British aristocrat like our friend Kharma here could do it.

Just press tab accidentally while you’re typing your message, so you start typing into the bloody title field, then delete what you typed and don’t bother restoring the title (which is not needed in each single message anyway). Et voila.

It's in 'miscellaneous' right below the microphone settings.

I use 7A SCB's on my Vette and try to fire an SCB when the ship is cool (not firing weapons for a few seconds). In those cases I do not use a heat sink and I get minimal heat damage. I save my one heat sink for times when I need to use an SCB while firing weapons. It's worked out pretty well for me. I typically fire an SCB 8-10 times and fire the heat sink 3 times during a RES session. I get minimal damage, but not enough to warrant the use of an AFMU (of which I carry one just in case).
