Because saluting a colleague in respect from the cockpit of your expensive piece of machinery is such a flyboy sort of thing to do. And I'd imagine that these civilian pilots, piloting amongst the fastest and most well-armed pieces of technology currently in the galaxy fancy themselves somewhat like the fighter jocks of old 21st century Earth. And that's why we salute each other everywhere.

Technically, we're flying mostly outdated ships older than us ^^ some of the designs are hundreds of years old in 3303, a bit like showing off in the streets, sunglasses on, blasting some music, driving our awesome 3 horses roman cart :p

Since I was just trying to find the abbreviation:

SLF - ship-launched fighter - tiny remotely-piloted combat ships that are launched from a host ship's Fighter Hangar.

Something is only outdated because something better replaces it, not because it's 'old'.
